Dynamite Shrimp
Freddsters' take on the popular dynamite or bang bang shrimp features perfectly crispy fried shrimp coated in a creamy, spicy salsa macha sauce. The key to success is the corn starch and flour coating that creates an irresistibly crunchy exterior, while the rich mayo-based sauce with salsa macha and sriracha delivers bold, complex flavors that'll have your neighbors raving.
Ingredients
- 1.000 lb shrimp
- 2.000 egg whites
- 0.500 cup corn starch
- 0.500 cup all-purpose flour
- seasonings
- 1.000 cup Kewpie mayo or regular mayo
- 2.000 tbsp salsa macha
- 1.000 tbsp honey
- 1.000 tbsp sriracha
- 1.000 tbsp soy sauce
- 2.000 cups oil
- 1.000 fresh lime
- cilantro
Instructions
- Whip up egg whites in a bowl
- Add shrimp to the egg white mixture and coat evenly
- In a separate bowl, combine corn starch, flour, and your favorite seasonings
- Prepare the sauce by mixing Kewpie mayo (or regular mayo) with 2 heaping tablespoons of salsa macha, honey, sriracha (if desired), and soy sauce until well combined
- Coat the egg white-covered shrimp in the flour and corn starch mixture
- Heat oil in a pan or deep fryer
- Fry the coated shrimp for about 2 minutes per side until golden and crispy
- Remove shrimp from oil and place in a large bowl
- Add the prepared sauce to the bowl with the fried shrimp
- Toss everything together until the shrimp is perfectly coated with sauce
- Transfer to a serving plate and squeeze fresh lime juice over the top
- Garnish with cilantro and serve immediately
